Chilli Dog With Cheese Taken To The Next Level

I am not sure how it happened exactly but I was in the supermarket and I was craving a chilli dog. The strange things is that I have never really had a chilli dog before but I wanted one. Perhaps its from watching to many American films with the kids that planted the chilli dog seed.

The only thing was is that I don’t like those soft processed hot dogs. They just leave me feeling hungry. So I had to find something with bite and texture, the hunt was on. I did discover a firm looking hot dog and it was by Bunlimited so I took a chance and took it home.

The Chilli For The Chilli Dog

I already had half a pack of frozen minced beef in the freezer. It was from an earlier purchase which of course was reduced. If any food is reduced and going for a bargain buy it and freeze it. Of course read the labels and check that it can be frozen , make sure it’s not been frozen before. I had a quick look online for a chilli dog recipe as I hadn’t made one before. Everything left me a little flat and disappointed as I wanted something with depth of flavour.

If this was going to be my first chilli dog then it had to be an awesome chilli dog recipe. I didn’t want to do the usual and throw in a few dry spice, I wanted full on Mexican chilli sauce. I grabbed some of the Mexican chillies I ordered a while ago and I should have pan fried them first. In my giddy excitement I forgot and put them straight in boiling water to soak.

Ingredients

  • 2 hotdogs (of your choice)
  • 1 onion (extra if you have it as a raw topping to your chilli dog)
  • 250g minced beef
  • 1 tin of tomatoes
  • half red pepper
  • half green pepper
  • Mexican dried chillies (your choice, any dried chilli will do)
  • 30g grated cheese (your choice)
  • pickles (your choice)
  • Chilli dog buns
  • 30g sugar
  • 2 cubes of fresh pineapple (or 30ml of white vinegar)
  • 1tsp smoked paprika
  • olive oil & butter for frying

Instructions

The first step is to de-seed your whole chillies and then dry fry for around 30 to 60 seconds 

Now add them to a jug of boiled water and allow then to soak (30 mins at least)

Dice the onion and 1 tsp of chipotle chilli then begin to fry in oil and butter until it starts turning translucent

Now added the peppers roughly chopped stir for 1 minute and then add the minced beef season well with salt and pepper 

Once the mince has browned taste to see if there is enough seasons, if not then add more. 

Once you have blitzed all the ingredients together pour it all into the pan with the minced beef. This is the start of your great sauce for the chilli dog. Now add 2 table spoons of sugar to the mix, this will balance out the acid you have blended in.

Now all you have to do now is let it cook out slowly for an hour or so. Mine was on for nearly 2 hours because I prefer the low and slow method and I wanted to get it to the right consistency. I want mine to be still a little running and not too thick so it pours over the chilli dog and then soaks into the bun. When I tasted mine through cooking it didn't have enough depth of flavour to it so to the spice cupboard. I added half a teaspoon of smoked paprika and then cooked it for another 30 minutes. It did taste amazing

 

 

A Proper Mexican Chilli Con Carne

I Started off by sautéing 1 large sliced onion and chipotle chillies in some oil (any type) and a little bit of butter. I always add butter when frying as it gives another layer of flavour. They were only cooked just until they started to go translucent because I wanted a little bite left in them. At this point I added some large diced red pepper, I would have added some green as well but there were none.

Next add the minced beef and season well and cook until minced beef for your chilli dog is brown. At this point I always taste the mix for seasoning before I add anything else. You want a good seasoned mix, its should taste like you would eat it on its own without adding else to. So what ever minced beef dish you are cooking always do this, its important that its properly seasoned before adding else.

The Chilli Sauce For The Chilli Dog Mince

For this I used large dried smoked Mexican chillies I had purchased in bulk, (not loads but a variety). I have looked in supermarkets for proper dried chillies but they are expensive. First you place them in a dry frying pan and heat for around 3 to 4 minutes. This begins to awaken the dried chilli and starts to release the oils within them.

The next stage is to now soak the chillies in boiling water for around 20 minutes. Mine were in there for around an hour and half as did them earlier and carried on working. Next you need a blender and people often add lots of things at this point. All I added was 2 large roughly chopped garlic pieces and a tin of tomatoes with the soaked chillies. Also season with salt and pepper then I added 2 pieces of cubed pineapple. The only reason I added it is because I had some in the fridge. If I hadn’t used it I would have added white vinegar as the acid helps to break down the meat. Also add some of the water you soaked the chillies in and save the rest until later.

The Marriage of The Chilli Sauce and Cooked Mince Beef

The Chilli Dog Bun

Well it has to be long and quite thin to make a chilli dog but what do you use. For this recipe I used a ciabatta as it was reduced, I cut it in half first short cut. Then I cut in half again long ways to make 4 buns then cut a slit to put the hotdogs in. You could of course get a tortilla wrap, spread some cheese on it and then put the hotdog in.

Roll it up and place in the oven for 4 mins to melt the cheese and then pour over the Mexican chilli sauce. It would be a chilli dog wrap.

The Chillies For The Chilli Dog

I got a selection of different chillies from Amazon as I wanted to explore the different tastes and not just heat. I went with Chillies on the web (affiliate link). It comes with 7 different dried chillies and a bag of Mexican oregano which tastes so much different to regular oregano.

For my chilli dog recipe I went with the Ancho grande chilli which is mild and has been smoked. I also added to it pecan smoked chipotle chillies along with plain supermarket dried chipotle. I haven’t used any of the spicier chillis yet as I haven’t been brave enough. Its the flavour that I want.
