When planning any Chinese meal either a quick snack or an emperor’s banquet you just have to have my easy egg fried rice. Period it  just cannot happen with out it. Over one billion Chinese people haven’t got it wrong have they. Yes its true that China produces around 30% of the worlds rice output so they have a lot to go around.

Now everyone has their favourite Chinese takeaway with the perfect egg fried rice recipe. Have noticed though on the menu at the top of the rice dishes its always the most expensive dish. You have to go all the way to the bottom to find the egg fried rice, below that its plain boiled rice. Errghh that plain tasteless rice. I admit its good for soaking up those delicious  Chinese sauces. Top of the menu is usually the special fried rice and don’t worry you can also make this at home.

Considering you can get basic long grain rice for around a £1 per kilo. Suddenly the average price of a takeaway egg fried rice  doesn’t  come that cheap at all. I hope to convince you that you to can make this tasty Chinese peasant dish in you own home.

Cheats Egg Fried Rice

The traditional way of making egg fried rice involves some degree of skill. The hardest part is in cooking the dried rice in the first instant. Now I consider myself quiet a good cook (my friends do to, honest) but boiling rice is my nemesis in the kitchen. I no longer even try to cook rice from scratch, I have no desire to even try any more especially as I have a quicker more convenient method.

Boil in the bag rice ? No takes to long, I use microwave long grain rice the same as I do for my cheats keema rice . All it takes is two minutes in the microwave and its done. Well nearly done it just needs cooling and then tossing into a frying pan. As always its Cheap Dinner Ideas so the best long grain rice to get is the cheapest. Don’t get that rice from your Uncle as its way expensive. The cheapest I have found for microwave rice is Sainsburys home brand at 55p for 250g. Great to always have in the cupboards as a stand by. Stop the press, just found a bag in Aldi for 45p so will have to try that.

Soya Sauce, never ever buy one of those small bottles of soya sauce as they are far to expensive. Ideally if you live in a city find your local Chinese supermarket. Whenever I know I am passing close to one I always stock up on Chinese goodies. Shopping list, egg noodles, Soya Sauce, Sweet Hosin sauce, Oyster sauce, the only problem I have is finding storage for it all.

Ken Hom only really uses 4 ingredients so it looks pretty similar and simple too.

Ingredients

  • 1 bag of microwave long grain rice
  • 1 egg
  • 3 tsp of Light Soya Sauce
  • 1 tsp of cooking oil

Instructions

Microwave the rice as to the instructions on the packet

Remove from the pouch and spread onto a plate to cool

Large frying pan (or wok) with the oil get hot

Add the cooled rice and cook for 1 minute

Add the soya sauce cook for 2 minutes

Break the egg in the pan with the rice

Now stir vigorously so the yolk breaks and all the rice gets coated with the egg

Cook the rice until all the egg is cooked

Serveeasy egg fried

Notes

You can add as much or as little of the soya sauce Once you have mastered this then the possibilities are endless

Easy Special Fried Rice Recipe

So the easy egg fried rice is now mastered so the next step is the special fried rice. I have noticed that all the Chinese takeaways have slight variations in what they included or exclude. This is down to the regional cooking differences the owners of the takeaways come from. So as each special fried rice differs so can yours but better as it has all your favourites in there.

The easiest thing to add to your special fried rice is frozen peas and sweetcorn. The next would be frozen peppers in small bite size pieces ( always buy a big bag of fresh peppers, slice and freeze for a multitude of dishes) The special fried rice is a smorgasbord of delights. I am a certified carnivore so the meat content for me is a real treat.  Add you own belly pork (cooked as a whole slab then cut into small portions in the freezer).

Once the pork has part defrosted  cut off the tough skin then dice into bitesize pieces. This helps defrost it much quicker especially as we all have busy life’s. Another great freezer staple is cubed pieces of ham leftover from roasting a large Sunday gammon roast. (great for other dishes as well). Onions ! some days I do some days I don’t, if I do then I chop them quite fine, cooking them first so they get a lovely brown crispy edge to add texture to the dish.

Special Fried Rice Possibilities

The possibilities are endless to creating your very own Special fried rice. The best day for creating a special fried rice is midweek as we always have some leftovers from the Sunday roast in the fridge. Chicken, beef, broccili, whatever you may have left, just dice into small cubes and add a few splashes of  marinade for 5 minutes.

If you get the balance right the rice should be firm and a little salty from the soya sauce. If the wok was hot enough you get some crispy burnt edges on the rice to add a little texture. As you bite into the marinaded meat you get a hit of Chinese flavoured sweetness. One of the great flavours is the occasional pop of clean sweet peas mixed with the salty rice. It just leaves you wanting another chopstick full.

Don’t you need a wok to cook Chinese food. No any good cook uses what they have to hand.! We always cook our easy egg fried rice in a small non stick frying pan. We also have non stick woks, one medium along with a large one. I gave up with the authentic carbon Chinese wok as the non stick I find more versatile. You don’t have to spend a fortune to get a good wok so shop around and choose wisely.

Egg fried rice can be served either as a quick snack, a side dish to your main meal. If you serve special fried rice it can be a meal in itself, versatility is the name of this dish.

I confess I do not like my curry dishes to hot with chilli as it make my eyes water and my head perspire. No its not funny and I haven’t  much hair on top so it makes for a little shimmering water fountain which trust me is not attractive when your eating out with friends. Strangely though the spice I use to make my cheats keema rice has little effect on me. The chilli loving friends however find it hot so it becomes my turn to giggle inwards at their flushed faces and hurried beer drinking to quench the heat.

Keema is a traditional meat dish from Indian. The word keema is probably borrowed from the Turkish language meaning minced meat. Usually mutton or Lamb. (source=wiki)

After looking at a few keema rice recipes I was a little overwhelmed as to some of the lengths they go to to get this quick easy dish to the table. I conjured up this cheats keema rice recipe at the 11th hour when friends decided on a surprise visit one weekend so I had to make things stretch a little further and use what I had in the kitchen cupboards. All it takes is 4 ingredients and less than 10 minutes actual  cooking time. You can add extra ingredients if you so do desire to bulk out the meat.

Ingredients

  • 1 Packet of Microwave rice (plain)
  • 2 tsp of Cayene pepper (or to taste)
  • 1 tsp turmeric (optional)
  • 200g mince meat
  • 1 onion (optional)
  • salt & pepper

Instructions

cheats keema rice If you are using an onion dice and gently fry until translucent, season Add the mince and spice fry until the meat is browned off Meanwhile microwave the rice as per packet instructions Once the rice is cooked pour out into a bowl and separate the grains with a fork Add rice to browned  mince ensuring every grain is covered with the flavoured oil Serve as a side dish

Notes

You can prepare the rice earlier in the day and once it has cooled then it will be easier to fluff the rice For another flavour and a vibrant colour add frozen peas

If I make to much of the cheats keema mince then it can be used to enhance any other part of your Indian feast.  Some  great ways to use up the mince meat is to make your own naan bread and stuff the cold meat inside before cooking the naan. You could also add some wilted spinach (or Peas, small diced cooked potatoes) to the mixture and then wrap in filo triangles for tasty easy starters. Instructions below

Cheats Keema Rice Samosas

  1. Preheat the oven to 200°C (400°F, gas mark 6). Taking one sheet of filo pastry at a time (keeping the other sheet covered to prevent it from drying out). Cut the pastry  widthways into 6 strips, each 30 cm (12 in) long. Brush them with a little of the oil.
  2. Lay one of the pastry strips lengthways in front of you and put a rounded tbsp of the filling in the middle of the end nearest to you. Pick up one end corner and fold it diagonally over the filling to make a triangular shape, flattening the filling slightly. Continue folding the strip over in a triangular shape until you come almost to the end. Trim off excess pastry from the end. Repeat with the remaining filo pastry and filling to make 12 triangles in all.
  3. Place the filo triangles on a non-stick baking sheet, brush the tops with the remaining oil and scatter over the crushed coriander seeds. Bake for 10–15 minutes or until golden.

Authentic Keema Rice

If you are looking for a more authentic keema rice then you will need a full selection of spices. Not only that you will need a little more time to let the flavours develop some more. The spices you will need are coriander seeds, cumin seeds, chilli powder, turmeric  and crushed garlic. You will also need some  Kasuri Methi (fenugreek leaves) and tomatoes for the full authentic keema recipe.

Keema Naan Bread

Try making you own homemade curry, start with the basic curry sauce. Then you can make the naan bread and when you have mastered that you can stuff the naan with your keema mix. Its so simple to make keema naan, just follow the basic naan bread instructions but roll out the dough thiner as you are going to double wrap. Once the dough is rolled add a spoonful of the keema mix to the dough and spread it out thinly. You don’t want to much mixture in the naan bread as it will make it to wet. Fold over the dough enclosing the keema mixture.Make sure the dough is sealed al the way around so the keema doesn’t leak during cooking.

Is a perfect comfort food but not as we know it. The Bangladeshi love this dish on a cold wet dreary day. Just  like we may enjoy something with mashed potatoes or maybe with cheese.
